A special thanks to Cathy Plyley. She took a chance on this baked beans recipe (which Barrow Bay Living hadn't tried yet) and served them to her guests the 1st of July weekend. They were a huge hit and worth every minute it took to make them!

Recipe

  • 2 lbs. dried navy beans
  • 1 teaspoon(s) baking soda
  • 1 medium onion, sliced
  • 1 tablespoon(s) salt
  • 4 teaspoon(s) cider vinegar
  • 1 teaspoon(s) prepared mustard
  • ½ cup(s) brown sugar
  • ¾ cup(s) molasses
  • ¼ cup(s) ketchup
  • dash of pepper
  • ¾ lb. salt pork, sliced

Old-fashioned Baked Beans Directions

Thoroughly wash beans and place them in a 4 quart/4.5 litre saucepan. Add enough water so that water level is 2 inches above beans. Soak overnight.

Drain. Cover with fresh cold water, add baking soda and bring to a boil on medium high heat.

Drain again, rinse, cover with cold water and bring to a boil. Remove from heat.

Place onions and all seasonings in the bottom of deep casserole dish. Add the hot beans and liquid, as well as boiling water to barely cover the beans. Lay strips of salt pork over beans. Cover and bake in 250°F oven until beans are tender, 9 to 10 hours. While the beans bake, add more boiling water as liquid evaporates.

Remove cover and bake for 1 hour. Saltpork should become brown and crisp.

Serve hot.
