Recipe

  • 3-4 lb. pork loin or 2 pork tenderloins
  • 1 cooking onion, chopped
  • 2 cloves garlic, minced
  • 1 can of beer or gingerale
  • 1 tablespoon(s) worcestershire
  • 1 tablespoon(s) chili powder
  • 1 - 500 ml/16oz Diana Gourmet Rib and Chicken sauce
  • 6 to 8 6-inch flour tortillas
  • 1 jar mango salsa
  • 1 tin black beans, rinsed and drained
  • sliced avocado
  • about 2 cups shredded cheddar cheese

Pulled Pork Tacos Directions

Spray sides of crockpot with cooking spray. Place pork in the crockpot. 

Mix together onion, garlic, beer or gingerale, worcestershire sauce and chili powder. Pour over pork. Cook for 8 hours on LOW setting, or for 4 hours on HIGH setting.

Remove pork from crockpot, shred and return to crockpot. Blend in rib sauce and continue to cook on LOW setting for about 30 minutes.

Separate tacos and place each on a plate. Place ΒΌ cup pork, and 1 tablespoon each of mango salsa and black beans, sliced avocado and shredded cheddar cheese on each taco.

Serve.
