Rice with sauted vegetables is a great side dish. Alter the portions as needed.
For 4 Serving(s)
Add butter to a large saucepan. Saute mushrooms, onion and/or peppers on medium-high heat setting for 4 minutes or until mushrooms have started to brown.
Mix together water and chicken bouillon in a measuring cup. Add with rice to pot. Cover pot, and set temperature to high.
ELECTRIC COOKTOP - When water boils, turn off heat and leave covered pot on heating element. Let stand, COVERED, for 30 minutes. Lift lid and stir. If fluid is absorbed, rice is cooked. If not absorbed, cover for additional 10 minutes.
GAS COOKTOP - When water boils, reduce heat to low and simmer for 20 minutes or until all water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
PORTIONS - Electric stovetop--2 servings = 1 cup water/1/2 cup rice--4 servings = 1 2/3 cups water/1 cup rice--6 servings = 2 1/2 cups water/1 1/2 cups rice--8 servings = 3 1/3 cups water/2 cups rice
PORTIONS - Gas stovetop--2 servings = 1cup water/1/2 cup rice--4 servings = 2 cups water/1 cup rice--6 servings = 3 cups water/1 1/2 cups rice--8 servings = 4 cups water/2 cups rice.
