Leftover roast beef? Try this palate-pleasing soup!

Bring roast beef, green pepper, onion and 1 cup water to a boil in a 3 quart pot. Simmer for 5 minutes.
Add mixed vegetables, diced potato and 4 cups water to pot, and bring to a boil. Reduce heat and simmer, uncovered, until vegetables are cooked, about 30 to 40 minutes.
Replenish water and boost flavour - add up to 3 cups of water, up to 3 1/2 tablespoons beef bouillon concentrate, cilantro and basil. Bring to a boil. Add egg noodles and simmer until the noodles are cooked, about 12 minutes. Serve.
