This salad can be served hot or cold!

Cut bacon slices into ½-inch pieces, and fry in large frypan on medium-high heat setting. When almost cooked, add onion and saute until transparent.
Add flour and stir. Continue to cook, while gradually adding water and vinegar. Cook until thickened. Add sugar and paprika, and season with salt to taste.
Remove from heat. Fold in diced potatoes, mixing well. Add eggs and parsley.
Serve hot or cold!
