Black Bean and Corn Medley


For a great vegetarian entree, serve this medley with shredded cheddar wrapped in a 10 inch flour tortilla.

It's a great appetizer too, when served with corn tortilla scoops!

  • 3 tablespoon(s) lime juice
  • 1 teaspoon(s) olive oil
  • 1 teaspoon(s) ground cumin
  • 1 cup(s) canned black beans, rinsed and drained
  • ½ cup(s) halved cherry tomatoes
  • ¼ cup(s) kernel corn
  • ¼ cup(s) diced green chiles, if desired
  • 2 tablespoon(s) minced spanish or red onion
  • 2 tablespoon(s) chopped fresh cilantro
  • 1 clove garlic, minced
  • ¼ Teaspoon(s) salt

Black Bean and Corn Medley Directions

Whisk together the lime juice, oil, cumin and salt. Add remaining ingredients and mix thoroughly.

Serve in a wrap, or in corn tortilla scoops.
