Recipe

  • 1 1/4 lbs. lean ground beef
  • 1 medium cooking onion, diced
  • 1/2 large green pepper, diced
  • 1 clove garlic, minced
  • 1 - 796ml/28oz. can diced tomatoes
  • 1 - 398ml/13oz. can tomato sauce
  • 1 - 540ml/18oz. can black beans, drained and rinsed
  • 1 - 341ml/11oz. can kernel corn
  • juice of one lemon wedge
  • 2 to 3 tablespoon(s) chili powder
  • 1/2 teaspoon(s) cayenne pepper
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper

Jane's Costa Rican Chili Directions

In a large frypan, cook ground beef, onion, garlic and green pepper on medium heat.  

When ground beef is no longer pink, add diced tomatoes, and with hand blender, puree some of mixture to reduce lumps. Add tomato sauce, black beans, (drained) corn, and lemon juice.  Stir until the mixture is well-blended

Add chili powder, cayenne, salt and pepper.

Simmer the chili for 20 minutes, and serve with fresh bread, in a taco or on corn chips

This chili freezes well!
