Recipe

  • 1 1/2 lbs. lean ground beef
  • 1 celery stalk, chopped
  • 1 - 796ml/28oz. tin diced tomatoes
  • 2 - 284ml/10oz. tins onion soup
  • 5 cup(s) water
  • 2 cup(s) frozen mixed vegetables
  • 1- 680ml/23oz. tin pasta sauce
  • 1/2 cup(s) small pasta
  • 2 tablespoon(s) chopped fresh parsley OR 2 teaspoon(s) dried parsley
  • 1 1/2 teaspoon(s) white sugar
  • 1/2 teaspoon(s) dried thyme, oregano and basil
  • 1/8 teaspoon(s) pepper

Minestrone Soup Directions

In a large soup pot, lightly brown ground beef on medium-high heat setting. Add celery and cook until softened.

Add tomatoes. Puree the beef tomato mixture so that lumps are reduced. Add onion soup and water.  Bring to a boil. Add vegetables, and cover and simmer on medium-low heat setting for 30 minutes.

Add pasta sauce, pasta, parsley, sugar, herbs and pepper. Simmer, uncovered for an additional 30 minutes, stirring occasionally.

Remove from heat and serve.
