Recipe

  • 1 cup(s) chopped dates
  • 1 teaspoon(s) baking soda
  • 1 cup(s) boiling water
  • 1 egg
  • 1 cup(s) brown sugar
  • 1 teaspoon(s) vanilla
  • 1 1/2 cup(s) all-purpose flour
  • 1/2 teaspoon(s) salt
  • 1 tablespoon(s) melted butter

Date Loaf Directions

Place dates in a large bowl. Dissolve baking soda in boiling water and pour over dates; let cool.

In a small bowl, beat egg. Gradually add brown sugar, beating well after each addition. Add to cooled date mixture and mix well.

Stir in vanilla, flour and salt. Add melted butter and mix until well blended.

Pour into greased or waxpaper-lined loaf pan. Bake in 350°F oven for 45 to 55 minutes, depending on loaf pan size. 

Cool on wire rack. Store in a cold room or refrigerator.
