Recipe

  • 1 cup(s) all-purpose flour
  • 1 cup(s) brown sugar
  • 3/4 cup(s) rolled oats
  • 1/2 cup(s) butter or margarine, softened
  • 4 cup(s) rhubarb, cut into 1/2-inch chunks
  • 1 cup(s) granulated sugar
  • 1 cup(s) water
  • 2 tablespoon(s) cornstarch
  • 1 teaspoon(s) vanilla

Rhubarb Crisp Directions

In a medium-size bowl, mix together flour, brown sugar and oatmeal.  Work in the butter until the mixture has a lumpy texture. Transfer half of the mixture into the bottom of a lightly greased 8-inch square pan.

Top with 4 cups chopped rhubarb.

In a medium saucepan, mix together granulated sugar, water, cornstarch and vanilla. Cook on medium heat until the mixture thickens and becomes clear. Remove from heat and pour over the rhubarb. Cover with remaining oatmeal mixture.

Bake in a 450°F oven for 35 to 40 minutes.

Remove from heat and let cool before serving.
